Beer Battered Fish Recipe |

4 lbs fish fillets (catfish, bass, firm fish of your choosing)
Lime juice
Flour; seasoned with salt and pepper to taste
1 cup vegetable oil
Batter:
2 cups flour
1 tsp salt
½ tsp cayenne pepper
2 cups beer of your choosing

- Slice fillets into 2-inch strips; sprinkle with lime juice; roll in seasoned flour
- Prepare batter by combining flour, salt, and cayenne pepper; gradually blend in beer until thoroughly mixed
- Heat oil in large pot, fish fryer, or cast iron dutch oven
- Dip fillet strips into batter; fry in hot oil until golden brown; drain on paper towel
- Serve with hot sauce, tartar sauce, or malt vinegar
