    Standing Rib Roast

    • 3/4 cup all purpose flour
    • 1 - teaspoon salt
    • 1/2 teaspoon freshly ground pepper
    • 1 tablespoon paprika
    • 3 - garlic cloves, minced
    • 71/2 to 10 pounds roast trimmed of excess fat,feather bone and ribs loosened and tied in place
    • Horseradish sauce optional

      Pre heat oven to 500° F. Combine flour, salt, pepper, paprika and garlic. Rub roast completely with this mixture. Place roast fat side up in shallow roasting pan.

      Rake is not necessary since bones form a natural rack. Insert meat thermometer into the thickest part of roast, making sure tip does not touch bone. Sear roast at 500° F for 15 minutes.  Reduce heat to 325 ° F and continue cooking as desires.

      To determine roasting time:
      Very Rare - 15 minutes per pound or 140 ° F on thermometer.
      Medium - 20 minutes per pound, or160° F on thermometer.
      Well Done - 25 minutes per pound, r 170 ° F on thermometer.

      When desired doneness, is reached, turn off heat.  Leave oven door ajar and allow meat to rest 20 minutes.
