Ingredients
Cilantro to garnish
1/2 lb. of Chorizo "Spanish" Sausage
2 Medium Idaho Potatoes
(Cut into home fries)
1/2 dozen large or jumbo eggs
1 Medium Green Pepper or
 Red pepper cubed
1 medium Spanish Onion cubed
Crushed red pepper to taste
Salt & Pepper to taste
1 cup of milk

SPANISH BREAKFAST SKILLET
In a large skillet fry potatoes & Chorizo Sausage -
add peppers when almost done
In medium bowl scramble eggs with 1 cup of milk
add salt & pepper & crushed peppers to taste
Fry in a separate skillet!

When eggs are done combine with sausage,
potatoes, & veggie mix
Garnish with chopped cilantro!
Ingredients
2 Whole Farm Pride chicken breasts Split Skinned & Boned
1 box of stove top

ONE PAN CHICKEN BAKE
In a casserole dish prepare stuffing as instructions explain
 on the box place on bottom of dish 4 chicken breast halves
season Chicken breasts with garlic salt and pepper
Place Stuffing mix over chicken.
In a separate bowl mix together cream of mushroom soup
and milk then pour over stuffing and chicken
Bake at 300 degrees or until golden brown on top.
Add-ins and tasty options
green peppers, onions & fresh mushrooms
Fresh veggies like broccoli or cauliflower
Instead of cream of mushroom soup you can use
Cream style corn or Cream of Chicken soup
Ingredients
8 pieces of Western Ribs
1 large can of Pineapple
 (crushed or tidbits)
1 Bottle of K-C Masterpiece
BBQ sauce
1 Small onion

SWEET & TASTY BBQ WESTERN RIBS
 In a baking dish place the ribs on bottom of pan.
 Slice onion in thin slices place around ribs.
 Pour the pine-apple & juice over ribs and cover with foil.
 Bake at 350° for about 45 minutes. 
When almost done drain juices and pour on the BBQ sauce, leaving uncovered, place back in oven for 15 minutes more.
 
Ingredients
5 lb. bag of Potatoes
Six strips of
Hickory Smoked Bacon
1 lb. package of baby carrots
4-5 Pieces of Celery
1 medium onion
2 beef bouillon cubes
2 chicken bouillon cubes
Instant potatoes to thicken

Aunt JO JO 's Favorite  POTATO SOUP
 In a large soup pot add diced potatoes, celery,
 onions and bouillon cubes.
 Fill pot with water just a little over the potatoes -
Bring to a boil and cook till potatoes are fork tender.
 In the meantime, while the potatoes are cooking,
 Crisp hickory smoked bacon and crumble. 
 (You can use more bacon if you wish)
 When potatoes are done drain out 1/2 of the water
from the pot.  Add quart of milk and stir in
 instant potatoes to thicken.
 When done pour into soup bowls and garnish
with bacon, cheese & parsley 
Ingredients

3 Cups of Vinegar
1 2 Teaspoon celery salt
1 Teaspoon turmeric
1 Teaspoon of salt
Little oregano
Garlic Cloves
1/2 Cup of oil per gallon
One gallon glass jar or
four quart size jars
and new lids

HOT PEPPER RINGS
Makes one gallon of peppers
Boil jars and lids to sterilize.
Rinse and slice up enough peppers for a gallon jar
or four quart jars.
You can either slice the peppers thin or in chunks.
Pack the peppers into the jar tightly because once the
hot brine hits the peppers they will shrink up and float.
You can also add garlic cloves, sliced or chunked,
onions or baby carrots if so desired.
What I do is put some oregano in the bottom of the
jar and some garlic cloves.
It easier than cooking the oregano in the brine.
Mix the brine ingredients together and bring to boil.
Pour over jars of peppers and pour the oil on top.
Put on lids and allow to sit and cool.

Check to see if lids sealed

6 Thick Cut Pork Chops
 with Pockets for Stuffing
2 Cups of petite White Corn
1 Cup Minced sweet onion
1/4 Cup minced Green pepper
4 oz. softened cream cheese
1 tablespoon Cajun seasoning
1 teaspoon salt
1 teaspoon pepper
1 teaspoon snipped fresh parsley
1/2 cup seasoned bread crumbs
1 cup shredded Colby cheese
1/2 cup heavy cram
1/2 cup Parsley sprigs
1 cup roasted sweet red peppers

SCALLOPED PORK & CORN CREOLE 
 Coat 12" x 15" casserole dish with cooking spray
 Lightly spray chops and place in dish.
 In a large bowl, mix together corn, onion, green pepper,
cream cheese, Cajun seasoning, salt & pepper,
 parsley and bread crumbs.
 Spoon mixture into chops, stuff well and press together,
slightly sprinkle Colby cheese on top and
 drizzle with heavy cream.
 Cover casserole and place in 475°oven, for 40 minutes. 
 Uncover and bake for 10 minutes more, to brown lightly. 
 Remove from oven let stand for 5 minutes.
 Garnish with parsley and peppers.

PIGS in a Blanket
Here's a good one for the kids
Open Crescent Rolls & separate
Wrap American Cheese around the hot dog and
then wrap bacon around the cheese,
to keep the cheese in place.
Wrap the crescent dough around the hotdog.
Place on cookie sheet
bake at 325°until golden brown
Server with Mac & Cheese
Ingredients
10 slices of BOILED HAM
8 oz. package of cream cheese
1/2 teaspoon of granulated garlic
1/2 teaspoon chives
10 Green Onions

Mix together, cream cheese, garlic & chives.
Spread cheese over slices, place an onion in the
center and roll up.
Cut into slices and place a toothpick to keep rolled.
Serve well chilled.

GOLDEN GRILLED CITRUS CHICKEN
 Combine soy sauce, garlic and juices in large plastic
zipper bag and marinate several hours.
 (Turn once to coat other side of Chicken)
 Coat grill grid with Pam and grill for
 8-10 minutes, garnish with orange slices & parsley.

1 Tablespoon Bourbon Whiskey (Optional)

SMOKEY MESQUITE BBQ
Combine OJ, Whiskey, brown sugar and seasoning. 
Mix in a small bowl.
Place chops in a container and pour mixture
over chops & marinate for 1 hour or longer.
Grill or broil for about 15 - 20 minutes.
Ingredients
6 - Small loaves of Italian Bread
1 Lb. Course Ground Beef

1 Large diced onion
1 Large diced green pepper
3 cloves of garlic
1 can diced tomatoes
2 cans tomato sauce
1 can tomato paste
fresh chopped cilantro
1 can of kidney beans
1 can of pinto beans
1 tbsp. Crushed red pepper
1 tbsp. ground pepper
1 tbsp. Chili powder
1 cut up habanera pepper
FLAMIN' HOT CHILI BOWLS
Fry ground beef & strain grease.
In a large stock [pot, mix & sauté green peppers, onions,
garlic, & habanera pepper, ill onions are translucent
(DO NOT FRY)
.
Add in remaining ingredients and simmer for 3-4 ours.
Cut top of bread  pull out inside of bread,
to make BOWL serve chili in bread bowl & enjoy.

In a Kitchen Mixer combine soft ice cream,
pumpkin and spices to taste and mix well. 
Place in freezer container and refreeze.

 1 bottle Of Ranch Dressing
 Bacon Bits

BROCCOLI & CAULIFLOWER SALAD
 Chop Broccoli  Cauliflower into small bits.
 Combine together the remain ingredients and
serve well chilled.

Sliced Jalapeños

Can Black Beans

 BLITZBURG  NACHOS
On a cookie sheet place tortillas, pour over salsa, beans,
jalapeños and cheeses.  Bake at 350°
till cheese melts.
Take out of oven ,top with lettuce, tomatoes and
sour cream. Garnish with cilantro.

1# X-lean Ground Beef
1/2 Cup plain bread crumbs
1 Egg beaten
1/4 Cup ketchup
1 Tps. instant beef bouillon
1/8 Tps. pepper
4 Cups Frozen hash brown potatoes

1 Jar sliced mushrooms, drained
1 8oz shredded cheddar or
pizza cheese
Potato Burger Pie
 Preheat oven to 350
°
In a large bowl combine meat, crumbs, eggs, Ketchup,
bouillon and pepper.  Press onto the bottom and side of a (9 in.) pan.  Combine potatoes, onions, mushrooms and 1/2 cup of cheese.  Spoon over meat, cover and bake for 45 min. Pour off the fat.  Top with remaining cheese and bake 5 min. longer or until cheese is melted.

16oz. can of whole corn with the fluid
16 oz. of Cream style corn
Cup of sour cream
1/2 Stick of melted butter
MEMPHIS PUDDIN'
 Mix all ingredients together pour into a baking dish and
bake at 350°
for 45 minutes.

 Cook steak well.
Sauté green peppers, mushrooms,
and onions
, add to chip steak.  Pour Italian dressing over
meat a veggies.  Cut sticks length wise. 
Place cheese on bread and fill with meat & veggies. 
Bake for 10 minutes.

EASY BROCCOLI & CHEESE POTATOES
Prepare potatoes following package instructions.
(Set to the side)
Put frozen broccoli in strainer and run cool
water to thaw, place on plate or bowl and
microwave on high for 1 minute.
Drain excess liquid, stir together
cheese, garlic, and broccoli into potatoes. 
Heat through till cheese begins to melt. 
Ingredients:
2 Lbs. Ground beef
1 Small Chopped Onion
1/2 Green pepper Chopped
1/2 up Crushed Saltines
2 Egg Whites Slightly Beaten
3 Tablespoons Milk
1 Tablespoon Horseradish

HOMEMADE Salisbury Steaks
With Mushroom sauce

Combine all ingredients, mixing lightly, shape into eight oval patties. 
Cook in iron skillet 7 -8 Minutes.
Remove from skillet and add: 
1/2 Cup of Red Wine
Jar of Brown Gravy
and 8 oz. Sliced baby Portabellas Mushrooms
cook over medium heat until mushrooms are tender.
Ingredients:
1 Cup Diced Tart apples
2 eggs
1 Cup skim milk
1 cup Apple juice
1 tablespoon oil
2 Cups wheat flour or (reg. flour)
2 teaspoons baking powder
1 teaspoon cinnamon

 Cinnamon Pancakes
Place apples, eggs, milk, juice and oil in mixer until blended together.  Combine flour, baking powder and cinnamon. 
Stir into liquid mixture until combined.
DO NOT OVER MIX
Pour out mixture onto a lightly oiled griddle. 
When bubbles form it is time to flip over!
serve with warm syrup.
Ingredients:
1 Cup Shredded Swiss
1 Cup Cheddar Shredded
1/2 Lb. Deli Kosher Corn Beef
16oz. can of Kraut or Fresh Kraut
1 Cup Mayo
RUBEN DIP
Combine all ingredients in a glass baking dish.  Mix well.
Bake at 350°
. for 15 to 30 minutes.
Serve with Bagel chips or Party rye.

Mix together Romano, crumbs and parsley. 
Coat chicken with melted butter and roll in crumb mixture. 
Place in baking pan dish. 

Bake at 400
°for 40 minutes or until chicken is done.

* Or as a sandwich with mozzarella cheese & sauce
on a Italian roll.

DUMPLINGS WITH
KIELBOSSI & KRAUT
Mix egg & water together, add flour &salt to egg mixture. 
Boil in pot of water drop dough into boiling water
(little less tan a teaspoon) let cook for about 1-15 minutes. 
In a Crock pot add 2 lbs. fresh Barrel Kraut,1 lemon sliced,
2 cans of beer (Your favorite) and 1-2 Lbs.
Garlic Kielbossi: some minced garlic and pepper,
 add dumplings and cook on low 6-8 hours
.
Ingredients:
4 Potatoes Peeled

1 small onion
2 Eggs
1/3 Cup Flour
1 tsp. Baking Powder
1 tsp. Salt
1 Pinch Lemon Pepper or
pepper oil-for frying

POTATO PANCAKES
Grate potatoes either using the largest holes on a
flour-side hand grater, or the grate attachment on a food processor.  Place potatoes in a colander and rinse under cold water to remove the starch.  Be sure to let potatoes drain well.  Grate onion, removing any excess moisture by placing in colander and pressing with the back of a wooden spoon. Combine potato and onion. Beat eggs into mixture, stir in floor baking powder, salt & pepper.  Heat  1/8" of oil in a large skillet.  For each pancake, drop about 2 teaspoons of batter into oil an flatten with the bake of a wooden spoon: the flatter the pancake the crisper it will be.  Brown well on both sides.  Drain well on a paper towel.  Keep the cooked pancakes in the oven at 100°. 
Serve with Pink Cinnamon Applesauce or sour cream.
Makes about 2 dozen regular size or 5 dozen miniatures.

1 Small Shallot
1/2 Cup White Wine

Homemade Mushroom Soup
Sautéed Mushrooms & Shallots in a White wine till tender.
Add garlic, mix together corn starch and cream,
 with mushroom mix.  Bring to a slow boil.
Serve as soup or over pasta & chicken.

Corn Beef Brisket Seasoned
1 Head of Cabbage (CHOPPED)
6-8 Pealed & Cubed Potatoes

CORN BEEF POTATOES & CABBAGE BAKE
Place everything in a roaster 
Cover with 2 cans of beer and two cans of water. 
Bake at 350°for 2 hours and
then reduce heat to 250° for 2 more hours.

Ingredients:
1/4 cup Chopped Onions or Shallots
2 table spoon Butter
10 oz Box of thawed - Frozen Peas
1/4 Cup Proscuitto (or ham)
julienne cut
1/4 Cup Shredded Cheddar Cheese
Easy Easter Piselli
In a skillet over a medium heat - sauté onions in butter
until see through.  Add peas and cook for 3 minutes.
Add in Proscuitto, garnish with parsley and cheddar cheese

Ingredients:
1 Prepared Angel food cake
1 box of Sugar free
Vanilla instant pudding
1 20oz. can of crushed pineapples
2 cups coconut flakes
Maraschino cherries to decorate
container of Cool Whip
PINEAPPLE COCONUT CAKE
Cut cake into 3 layers.  Combine in large bowl,
Pineapples, Coconut
& Pudding - blend well.
Fold in whip cream & Ice the cake layers with the mixture. 
Put all back together and cover entire cake with remaining mix.
Decorate with cherries or strawberries. 
Chill for 2-3 hours.  Serve Chilled

Peanut Ol for Frying
2 Eggs beaten
2 Tablespoons of chopped parsley
1/2 teaspoons Tabasco Sauce
1 teaspoon of Dry Mustard
3 tablespoons Mayonnaise
1 pound lumped CRAB MEAT
1 teaspoon of fresh squeezed lemon
1/2 Cup of Cracker Crumbs
Flour
MARYLAND CRAB CAKES
Heat Peanut oil in a frying pan.  In a bowl combine
all ingredients except the flour. 
Shape into 2 inch balls and flatten slightly. 
Dredge the cakes in the flour and fry until golden brown.

Ingredients:
2 - 8oz. Cans refrigerated
Crescent Rolls
2 Eggs
3/4 Cup Sugar
1/1/2 - Tbsp. concentrated
lemon juice
8 oz. Cream cheese
1 tsp. Vanilla extract
1- 20 oz. can of any fruit pie filling
E-Z Cheezy Fruit Danish
1 - Preheat oven to 350° press can of dough
into a 9"x13" baking pan.
2 - In a bowl combine eggs, sugar, lemon,
cream cheese and vanilla. 
Mix until smooth and creamy, pour over dough. 
With second roll of dough stretch over cheese mixture.
Bake for 20 - 25 minutes or until crust is golden brown.
3 - Remove from oven spread pie filling over
top and let cool.

Ingredients:
15 cups popped corn,
unpopped kernels removed
2 cups packed light or
dark brown sugar
1 cup butter
1/2 cup light corn syrup
1 teaspoon salt
1 teaspoon baking soda

Caramel Crunch
  1. Preheat oven to 200*F (95*C). Place popped corn in a large, ungreased roasting pan or divide popped corn between two 13 x 9 x 2-inch baking pans (less desirable but it works, see note).

  2. Combine brown sugar, butter, corn syrup and salt in 2-quart saucepan. Bring to a boil over medium heat, stirring occasionally. Cook for 5 minutes, without stirring. Remove from heat, stir in baking soda and mix well. Mixture will become foamy.

  3. Immediately pour caramel mixture over popped corn and quickly toss to coat. (Or divide evenly between the two pans.) Don't expect all corn to be coated, that will happen in the course of  baking.

  4. Bake for 1 hour, stirring every 15 minutes. Remove from oven, immediately turn out of pan(s) onto a foil-lined counter top and break up slightly. Cool. Store in tightly sealed container.

Makes about 1 gallon. Recipe can be doubled.

Note: If you don't have a large roasting pan, those extra-large disposable aluminum roasting pans, available at supermarkets and discount stores, work very well and can be used more than once.

Ingredients:
2 boneless chicken breast
1 large sweet onion
2 - 4 tbsp garlic (add to taste)
 1/2 cup olive oil
1/2 cup butter
(cannot substitute margined)
1/2 cup Marcella wine
1/4 cup lemon juice
salt & pepper to taste
1 lb spaghetti noodles
Parmesan cheese

Chicken Scampi Garlic
(chicken breast served over noodles.)

  Sauté onion and garlic in pan with 1 tbsp olive oil.
Add chunks of chicken.
Sauté chicken for 4 min.
Add lemon juice & wine. Sauté for 2 min.
Add olive oil and butter.
Bring to boil and reduce heat until chicken is done.
Serve over cooked pasta with parmesan cheese

4 Large Vidalia Onions Sliced
1/4 Cup Butter
1/4 Cup Sour Cream
3/4 Cup fresh grated Parmesan
10 Crushed Ritz Crackers

Sweet Vidalia Casserole
Preheat oven to 350°
Grease a 1 quart baking dish with Pam or Butter.
In a large skillet sauté onions in the butter, until tender.
Remove from heat, stir in the sour cream. 
Spoon 1/2 of the mixture in the dish & sprinkle with cheese
toy with remaining onions and crackers.
Bake uncovered 20-25 minutes.

Ingredients:
2 boxes of Twinkies
6 oz. Orange Jell-O
1 box of vanilla Pudding
2 cans of orange segments drained
12 oz. Cool Whip
Grated Orange Rind to garnish

Sneaky Twinkies
Prepare Jell-O as directed on box pour over Twinkies. 
Prepare pudding as directed on box. 
Pour over Jell-O and cover evenly. 
Drain & Dry with paper towels or clean dish cloth
the orange segments.
Place them on top of pudding, spread Cool Whip
over top of everything and sprinkler with orange rind.
Chill for 2-3 Hours before serving.

Ingredients:
2 small boxes of Broccoli Cuts
1 Stick of Butter
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1 bag of Seasoned Stuffing Croutons
1 can Chicken Broth
1 cup Shredded Cheddar
1 Onion diced
2 Cups of Cut up (Cooked) chicken
**(This recipe is excellent for leftover chicken)

BROCCOLI CHEESE CHICKEN BAKE
Sauté onion in butter, pour into casserole dish. 
Add soups and mix well. 
Next add the chicken and broth. 
Stir well. 
Mix in stuffing, broccoli and cheese. 
Bake at 350° for 1/2 Hour Cool for 5 minutes

Meatloaf Seasoning Mix
(Durkeel)
1-Can of Brown gravy or
Mushroom Soup or
Tomato Sauce
Mini Meatloaf Bundles
Mix together Ground Beef peppers, onions and seasoning mix
Form into 8 Flat 1/4 pound patties. 
In the center of each patty place 1/4 cup of Stuffing and
mold patty around stuffing, to form a ball then flatten some. 
Place in baking dish and cover with choice of sauce. 
Serve with brown gravy, cream of mushroom soup
or tomato sauce over loaf.

2 Cups Cubed Cooked Chicken
1/4 Tsp. Pepper
1/4 Tsp Hot Salt
2 tsp. Milk

2 Cups Hot Sauce
Celery Sticks
Blue Cheese Dressing

HOT Chicken in a Blanket
Mix Cream Cheese, Chicken, Pepper, Hot Sauce,
milk & Crushed Pepper in a bowl.
Spoon mixture onto a separated crescent and roll up,
then place it on cookie sheet.
Brush with margarine.
Bake 20-25 minutes at 350°
In a small skillet bring to a boil Hot Sauce & Butter.
When crescents are done pour sauce over crescents and
serve with celery & Blue Cheese.

Ingredients:
2 Cups Graham Cracker Crumbs
1/2 Stick melted butter
1 stick soft butter
2 cups powdered sugar
2 eggs
2 Tsp. Vanilla
1 banana
1 cup well drained Pineapple
Whip Cream for topping

Cherries (Maraschino)
Chopped Nuts

Split Pie
Mix together and press into bottom of pie pan and chill for 2 hours.
Beat well for 10 minutes the soft butter, powdered sugar, eggs, and vanilla.  Spread mix over cracked crust.  Chill for 1 Hour.
Slice banana and press on top of pudding mixture,
spread pineapple over top of bananas. 
Cover with whip cream and garnish with the rest of ingredients
Chocolate sauce, Cherries and nuts when ready to serve.

1 1/2 Cups Sugar
7 Cups Boiling Water
2 Small Cans Frozen Lemonade
1 Small Can Orange Juice
2 Cups Strong Brewed Tea
2 Cups Southern Comfort Whiskey

Mix all ingredients together in a large freezer container or
in a Beach Bucket (Cleaned) and Freeze. 
It Takes all day or over night to freeze.
When ready to serve pullout of freezer, fill up half a glass with slush and top off with Squirt, 7-UP, or Sierra Mist can. 
Add Citrus slices for decorations.

Ingredients:
Minced Garlic
2 Chicken Breasts split, skinned, and deboned
Bag of Fresh Spinach
8 - very thin slices of Proscuitto
8  - Slices of medium Cut Gouda
Salt & Pepper to taste
Olive Oil
Cheesy Garlic Chicken Proscuitto Wraps
Pound out chicken breast, flat.  Season with minced garlic and salt & pepper.  Place fresh spinach on top of chicken
(any amount id fine) the add 2 slices of Proscuitto,
and 2 slices of Gouda. 
Roll up tightly and rub with olive oil, add more garlic, salt & pepper.  Cook on grill or oven.

For easy cooking spray foil wrap with oil and
wrap chicken tightly with the foil.

Ingredients:

1 (8 ounce) package uncooked egg noodles
1 (10.75 ounce) can condensed
tomato soup
1 (11 ounce) can Mexican-style corn
1 medium onion, finely chopped
1 (10.75 ounce) can condensed cream of mushroom soup
16 slices American cheese

Hillbilly Casserole
  1. Bring a large pot of lightly salted water to a boil. Add the egg noodles and cook until tender, about 7 minutes.
    Drain, and set aside.

  2. Preheat the oven to 350 degrees F (175 degrees C).

  3. In a large bowl, mix together the
    tomato soup, corn, onion,
    and cream of mushroom soup.
    Stir in the cooked noodles until well coated.
    Transfer to a 9x13 inch baking dish. Place slices of
    cheese to cover the top.

  4. Bake for 25 minutes in the preheated oven, or until cheese
    is melted and lightly brown

Ingredients:
2 - 1lb. cans of tomato sauce
1- 2lb. Bulk Hot Sausage
Bag of frozen mixed-veggies
Elbow or small shell noodles
Green peeper diced
Onion sliced
Parmesan Cheese to taste
2 Tsp. Crushed red pepper
Chopped cilantro to garnish
shredded Cheddar to garnish
HOT SAUSAGE Soup
Fry ground hot sausage in skillet, drain grease,
place in stock pot, add in veggies, sauce spices,
simmer for 1-2 hours.
ADD: Cooked pasta about 1/2 hour before done.
Simmering and garnish with cilantro and cheese.

Ingredients:
1 package of Flour Tortillas
1 sliced Onion
1 green Pepper, cored & Sliced
1 tablespoon vegetable oil
1 1/2 lb. HOT Italian Sausage
2 Cups prepared spaghetti sauce, heated
1 1/2 Cups shredded Mozzarella Cheese
GRILLED ITALIAN SAUSAGE WRAPS

Remove tortillas from refrigerator.  Heat the Grill.  Place sliced onion & green pepper in aluminum foil.  Drizzle oil over vegetables.  Wrap foil to enclose.  Place on grill away from direct flames.  Cover grill and heat for 25 minutes.  Place sausage directly on grill grates.  Cook for 10 - 15 minutes, turning often, until fully cooked.  Slice sausage diagonally into bite size pieces.  Heat tortillas in foil on grill for 5 minutes.  Place sausage and grilled vegetables into center of tortillas.  Top with heated spaghetti sauce and cheese.  Fold tortillas to enclose filling.
Serve Immediately.

24 - Pack of Phyllo Pastry Dough
Can of Pam Spray (Butter Flavor)
11/2 Lb. - Ground Beef (Tom Friday's)
1 - Package of Brown Gravy Mix
1 - Can of carrots (diced)
1 - Can of Dried Potatoes
Salt & Pepper to taste
Dinner in a POCKET
Fry ground meat in skillet until golden brown,
strain grease and set aside.
Place Phyllo dough on a piece of plastic wrap,
with a damp towel over it. 
Take off 1 piece of Phyllo at a time and spray each layer with Pam, until you do 4 pieces each to make 6 wraps.
Combine Ground beef, carrots, potatoes and gravy - spoon
out evenly on all 6 wraps.  Fold like a Burrito and bake at 375°
for 12 - 15minutes, n a greased baking sheet.

1 cup bran flake cereal
1 cup banana, mashed
 (about 3 medium)
2/3 cup milk
1/4 cup packed brown sugar
1/4 cup vegetable oil
1 large egg
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
Banana Bran Muffins

In a large bowl, combine bran, mashed bananas, and milk, stirring well; let stand for 5 minutes.
Add brown sugar, oil, and egg; mix well. In another bowl, combine flour, baking powder, cinnamon, and salt. Stir into the bran mixture until just combined. Spoon into greased muffin tins, filling half full.

Bake at 375*F for 20 to 25 minutes.

Makes 1 dozen muffins

Ingredients:
6-8 Medium Potatoes
1 Onion  chopped
Cleaned & Cubed
2 Ham Shanks Split
1 bag of pearl onions
2 Bags of frozen green beans
1 Lb. bag of baby carrots chopped
Garlic to taste
Pepper & Salt
Parsley
2 Chicken Bouillon cubes
2 Beef Bouillon cubes
HAM & BEAN SOUP
In a large stock pot, fill up about 1/2 with water and ham shanks.  Add salt & pepper, garlic, parsley and bouillon cubes.
Bring to a boil.  The simmer 2-3 hours.
Take out shanks let cool and pull of meat from bone
and place back into pot.
Add potatoes, onions, carrots and beans. 
SLOW BOIL till potatoes are tender.

Pack of flour Tortillas
1 Bunch of Green Onions
1 Yellow pepper
1 Orange pepper
1 Jar of Salsa
16oz. Cream Cheese

Mix 1/4 cup salsa and with the cream cheese.
Cut tips and clean green onions, clean and slice peppers into strips.  Place flour tortilla and place onion and one slice of each pepper at one end of tortilla and roll-up. 
Cut into 1 or 2 inch pieces.
Dip into salsa   Great for appetizer.

Ingredients:
4 tbsp. butter
2 cloves of garlic smashed
1/4 tsp. fennel seed
2 small zucchini diced
31/2 tsp. flour
21/2 cups of chicken stock
11/4 lb. cooked scallops
cut into 1/2
3 tbsp. heavy cream
1/4 cup parmesan cheese
salt & pepper
few drops of lemon juice

In a sauce pan heat butter, garlic, chives, fennel and zucchini
 mix in flour and cook 1 minute over low heat.
Add stock and mix well.  Bring to boil, season with salt & pepper
to taste, cook 8 minutes.  Mix in cooked scallops cream & lemon juice, cook 1 more minute.  Serve with rice or pasta.

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
2 cups confectioners' sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract
 HAM & BEAN SOUP
 
Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.

In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.

Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.

To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.

the juice of 1 Lemon

1/2 Cup Soft Butter
1/2 Cup Sugar
1 Tsp. Cinnamon
3 Eggs
4 Tbsp. Rum
11/4 Cup Flour
Pinch of Salt

Place butter, cinnamon and sugar in bowl and cream together, add eggs one at a time, beat in well after each addition with last egg add the rum.  Mix flour and salt, stir into batter mixing with a spatula and pour into a spring form pan,
bake 40 - 45 minutes.

1 Loaf of fresh Italian Bread Cubed
1 lb. Bacon cooked & cut up
1/2 lb. Bulk breakfast sausage
1 Dozen of eggs scrambled (uncooked)
11/2 Cups of Monterey Jack & Cheddar cheese
1 Small Onion Chopped up
1 Small Green Pepper Chopped up
1 Small jar of Pimentos
1 tsp. of parsley
1/4 tsp Cayenne pepper
salt & pepper to taste
HAM & BEAN SOUP

Place bread cubes on bottom of baking dish. 
Add all ingredients to the dish and top with cheese.
Chill over night.  Bake uncovered for 40 minutes at 350°
