In a baking dish place the ribs on bottom of pan.
Slice onion in thin slices place around ribs.
Pour the pine-apple & juice over ribs and cover with foil.
Bake at 350° for about 45 minutes.

In a large soup pot add diced potatoes, celery,
onions and bouillon cubes.
Fill pot with water just a little over the potatoes -
Bring to a boil and cook till potatoes are fork tender.
In the meantime, while the potatoes are cooking,
Crisp hickory smoked bacon and crumble.
(You can use more bacon if you wish)
When potatoes are done drain out 1/2 of the water
from the pot. Add quart of milk and stir in
instant potatoes to thicken.
When done pour into soup bowls and garnish
with bacon, cheese & parsley |

Makes one gallon of peppers
Boil jars and lids to sterilize.
Rinse and slice up enough peppers for a gallon jar
or four quart jars.
You can either slice the peppers thin or in chunks.
Pack the peppers into the jar tightly because once the
hot brine hits the peppers they will shrink up and float.
You can also add garlic cloves, sliced or chunked,
onions or baby carrots if so desired.
What I do is put some oregano in the bottom of the
jar and
some garlic cloves.
It easier than cooking the oregano in the brine.
Mix the brine ingredients together and bring to boil.
Pour over jars of peppers and pour the oil on top.
Put on lids and allow to sit and cool.

1 Cup Minced sweet onion
1/4 Cup minced Green pepper
4 oz. softened cream cheese

Coat 12" x 15" casserole dish with cooking spray
Lightly spray chops and place in dish.
In a large bowl, mix together corn, onion, green pepper,
cream cheese, Cajun seasoning, salt & pepper,
parsley and bread crumbs.
Spoon mixture into chops, stuff well and press together,
slightly sprinkle Colby cheese on top and
drizzle with heavy cream.
Cover casserole and place in 475°oven, for 40 minutes.
Uncover and bake for 10 minutes more, to brown lightly.
Remove from oven let stand for 5 minutes.
Garnish with parsley and peppers. |

Open Crescent Rolls & separate
Wrap American Cheese around the hot dog and

Preheat oven to 350°

1 small onion
2 Eggs
1/3 Cup Flour

Grate potatoes either using the largest holes on a
flour-side hand grater, or the grate attachment on a food processor. Place potatoes in a colander and rinse under cold water to remove the starch. Be sure to let potatoes drain well. Grate onion, removing any excess moisture by placing in colander and pressing with the back of a wooden spoon. Combine potato and onion. Beat eggs into mixture, stir in floor baking powder, salt & pepper. Heat 1/8" of oil in a large skillet. For each pancake, drop about 2 teaspoons of batter into oil an flatten with the bake of a wooden spoon: the flatter the pancake the crisper it will be. Brown well on both sides. Drain
well on a paper towel. Keep the cooked pancakes in the oven at 100°.
Serve with Pink Cinnamon Applesauce or sour cream.

1 Prepared Angel food cake
1 box of Sugar free
Vanilla instant pudding
1 20oz. can of crushed pineapples
2 cups coconut flakes
Maraschino cherries to decorate

Cut cake into 3 layers. Combine in large bowl,
Pineapples, Coconut
& Pudding - blend well.
Fold in whip cream & Ice the cake layers with the mixture.

Heat Peanut oil in a frying pan. In a bowl combine
all ingredients except the flour.

2 - 8oz. Cans refrigerated
Crescent Rolls
2 Eggs
3/4 Cup Sugar
1/1/2 - Tbsp. concentrated
lemon juice
8 oz. Cream cheese
1 tsp. Vanilla extract
1- 20 oz. can of any fruit pie filling |

1 - Preheat oven to 350° press can of dough
into a 9"x13" baking pan.
2 - In a bowl combine eggs, sugar, lemon,
cream cheese and vanilla.
Mix until smooth and creamy, pour over dough.
With second roll of dough stretch over cheese mixture.
Bake for 20 - 25 minutes or until crust is golden brown.
3 - Remove from oven spread pie filling over
top and let cool.

- Ingredients:
15 cups popped corn, unpopped kernels removed
- 2 cups packed light or
dark brown sugar
- 1 cup butter
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1 teaspoon baking soda

Preheat oven to 200*F (95*C). Place popped corn in a large, ungreased roasting pan or divide popped corn between two 13 x 9 x 2-inch baking pans (less desirable but it works, see note).
Combine brown sugar, butter, corn syrup and salt in 2-quart saucepan. Bring to a boil over medium heat, stirring occasionally. Cook for 5 minutes, without stirring. Remove from heat, stir in baking soda and mix well. Mixture will become foamy.
Immediately pour caramel mixture over popped corn and quickly toss to coat. (Or divide evenly between the two pans.) Don't expect all corn to be coated, that will happen in the course of baking.
Bake for 1 hour, stirring every 15 minutes. Remove from oven, immediately turn out of pan(s) onto a foil-lined counter top and break up slightly. Cool. Store in tightly sealed container.
Makes about 1 gallon. Recipe can be doubled.
Note: If you don't have a large roasting pan, those extra-large disposable aluminum roasting pans, available at supermarkets and discount stores, work very well and can be used more than once.

1 large sweet onion
2 - 4 tbsp garlic (add to taste)
1/2 cup olive oil
1/2 cup butter
(cannot substitute margined)
1/2 cup Marcella wine
1/4 cup lemon juice

1 lb spaghetti noodles

Sauté onion and garlic in pan with 1 tbsp olive oil.
Add chunks of chicken.

Grease a 1 quart baking dish with Pam or Butter.
In a large skillet sauté onions in the butter, until tender.
Remove from heat, stir in the sour cream.
Spoon 1/2 of the mixture in the dish & sprinkle with cheese

Bake uncovered 20-25 minutes.

2 boxes of Twinkies
6 oz. Orange Jell-O
1 box of vanilla Pudding
2 cans of orange segments drained
12 oz. Cool Whip
Grated Orange Rind to garnish

Prepare Jell-O as directed on box pour over Twinkies.
Prepare pudding as directed on box.
Pour over Jell-O and cover evenly.
Drain & Dry with paper towels or clean dish cloth
the orange segments.
Place them on top of pudding, spread Cool Whip
over top of everything and sprinkler with orange rind.
Chill for 2-3 Hours before serving.

Mix together and press into bottom of pie pan and chill for 2 hours.
Beat well for 10 minutes the soft butter, powdered sugar, eggs, and vanilla. Spread mix over cracked crust. Chill for 1 Hour.
Slice banana and press on top of pudding mixture,
spread pineapple over top of bananas.
Cover with whip cream and garnish with the rest of ingredients
Chocolate sauce, Cherries and nuts when ready to serve.

2 Small Cans Frozen Lemonade
1 Small Can Orange Juice
2 Cups Strong Brewed Tea
2 Cups Southern Comfort Whiskey |

Mix all ingredients together in a large freezer container or
in a Beach Bucket (Cleaned) and Freeze.
It Takes all day or over night to freeze.
When ready to serve pullout of freezer, fill up half a glass with slush and top off with Squirt, 7-UP, or Sierra Mist can.

Pound out chicken breast, flat. Season with minced garlic and salt & pepper. Place fresh spinach on top of chicken
(any amount id fine) the add 2 slices of Proscuitto,
and 2 slices of Gouda.
Roll up tightly and rub with olive oil, add more garlic, salt & pepper.
Cook on grill or oven.

For easy cooking spray foil wrap with oil and
wrap chicken tightly with the foil.

Ingredients:
1 (8 ounce) package uncooked egg noodles
1 (10.75 ounce) can condensed
tomato soup
1 (11 ounce) can Mexican-style corn
1 medium onion, finely chopped
1 (10.75 ounce) can condensed cream of mushroom soup
16 slices American cheese

Bring a large pot of lightly salted water to a boil. Add the egg noodles and cook until tender, about 7 minutes.
Drain, and set aside.
Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the
tomato soup, corn, onion,
and cream of mushroom soup.
Stir in the cooked noodles until well coated.
Transfer to a 9x13 inch baking dish. Place slices of
cheese to cover the top.
Bake for 25 minutes in the preheated oven, or until cheese
is melted and lightly brown

Ingredients:
2 - 1lb. cans of tomato sauce
1- 2lb. Bulk Hot Sausage
Bag of frozen mixed-veggies
Elbow or small shell noodles
Green peeper diced
Onion sliced
Parmesan Cheese to taste
2 Tsp. Crushed red pepper
Chopped cilantro to garnish
shredded Cheddar to garnish |

Fry ground hot sausage in skillet, drain grease,
place in stock pot, add in veggies, sauce spices,
simmer for 1-2 hours.
ADD: Cooked pasta about 1/2 hour before done.
Simmering and garnish with cilantro and cheese.

Ingredients:
1 package of Flour Tortillas
1 sliced Onion
1 green Pepper, cored & Sliced
1 tablespoon vegetable oil
1 1/2 lb. HOT Italian Sausage
2 Cups prepared spaghetti sauce, heated
1 1/2 Cups shredded Mozzarella Cheese |

Remove tortillas from refrigerator. Heat the Grill. Place sliced onion & green pepper in aluminum foil. Drizzle oil over vegetables. Wrap foil to enclose. Place on grill away from direct flames. Cover grill and heat for 25 minutes. Place sausage directly on grill grates. Cook for 10 - 15 minutes, turning often, until fully cooked. Slice sausage diagonally into bite size pieces. Heat tortillas in foil on grill for 5 minutes. Place sausage and grilled vegetables into center of tortillas. Top with heated spaghetti sauce and cheese. Fold
tortillas to enclose filling.
Serve Immediately.

Ingredients:
24 - Pack of Phyllo Pastry Dough
Can of Pam Spray (Butter Flavor)
11/2 Lb. - Ground Beef (Tom Friday's)
1 - Package of Brown Gravy Mix
1 - Can of carrots (diced)
1 - Can of Dried Potatoes
Salt & Pepper to taste |

Fry ground meat in skillet until golden brown,
strain grease and set aside.
Place Phyllo dough on a piece of plastic wrap,
with a damp towel over it.
Take off 1 piece of Phyllo at a time and spray each layer with Pam, until you do 4 pieces each to make 6 wraps.
Combine Ground beef, carrots, potatoes and gravy - spoon
out evenly on all 6 wraps. Fold like a Burrito and bake at 375°
for 12 - 15minutes, n a greased baking sheet.

Ingredients:
1 cup bran flake cereal
1 cup banana, mashed
(about 3 medium)
2/3 cup milk
1/4 cup packed brown sugar
1/4 cup vegetable oil
1 large egg
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt |

In a large bowl, combine bran, mashed bananas, and milk, stirring well; let stand for 5 minutes.
Add brown sugar, oil, and egg; mix well. In another bowl, combine flour, baking powder, cinnamon, and salt. Stir into the bran mixture until just combined. Spoon into greased muffin tins, filling half full.
Bake at 375*F for 20 to 25 minutes.

Ingredients:
6-8 Medium Potatoes
1 Onion chopped
Cleaned & Cubed
2 Ham Shanks Split
1 bag of pearl onions
2 Bags of frozen green beans
1 Lb. bag of baby carrots chopped
Garlic to taste
Pepper & Salt
Parsley
2 Chicken Bouillon cubes
2 Beef Bouillon cubes |

In a large stock pot, fill up about 1/2 with water and ham shanks. Add salt & pepper, garlic, parsley and bouillon cubes.
Bring to a boil. The simmer 2-3 hours.
Take out shanks let cool and pull of meat from bone
and place back into pot.
Add potatoes, onions, carrots and beans.
SLOW BOIL till potatoes are tender.

Ingredients:
Pack of flour Tortillas
1 Bunch of Green Onions
1 Yellow pepper
1 Orange pepper
1 Jar of Salsa
16oz. Cream Cheese |

Mix 1/4 cup salsa and with the cream cheese.
Cut tips and clean green onions, clean and slice peppers into strips. Place flour tortilla and place onion and one slice of each pepper at one end of tortilla and roll-up.
Cut into 1 or 2 inch pieces.
Dip into salsa Great for appetizer.

Ingredients:
4 tbsp. butter
2 cloves of garlic smashed
1/4 tsp. fennel seed
2 small zucchini diced
31/2 tsp. flour
21/2 cups of chicken stock
11/4 lb. cooked scallops
cut into 1/2
3 tbsp. heavy cream
1/4 cup parmesan cheese
salt & pepper
few drops of lemon juice |

In a sauce pan heat butter, garlic, chives, fennel and zucchini
mix in flour and cook 1 minute over low heat.
Add stock and mix well. Bring to boil, season with salt & pepper
to taste, cook 8 minutes. Mix in cooked scallops cream & lemon juice, cook 1 more minute. Serve with rice or pasta.

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves

1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
2 cups confectioners' sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract |
Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency. |

Mix all ingredients together and spread
on crackers or bagel chips |

1 lb. Bacon cooked & cut up
1/2 lb. Bulk breakfast sausage
1 Dozen of eggs scrambled (uncooked)
11/2 Cups of Monterey Jack & Cheddar cheese
1 Small Onion Chopped up
1 Small Green Pepper Chopped up
1 Small jar of Pimentos
1 tsp. of parsley
1/4 tsp Cayenne pepper
salt & pepper to taste |

Place bread cubes on bottom of baking dish.
Add all ingredients to the dish and top with cheese.
Chill over night. Bake uncovered for 40 minutes at 350° |
