Chicken, Asparagus & Bell Pepper Stir Fry

  • 1 medium Organic Chicken Breast, chopped into pieces
  • 2 tbsp Pure Olive Oil
  • 1 cup Asparagus, chopped
  • 1 cup Red Bell Pepper, chopped
  • 1/2 cup Green Onion, chopped
  • 1 tbsp Fresh Ginger, minced
  • 1 tbsp Toasted Sesame Oil
  • 1 tbsp Low-Sodium Soy Sauce
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1 cup Brown Rice

  1. Cook brown rice as per package instructions.
2. Using a wok or good nonstick pan over high heat, add olive oil. Add Chicken and begin frying. Add asparagus, bell pepper, green onion, and ginger.
Next, add the sesame oil and soy sauce, then season with salt and pepper.
3. Move the items around in the pan.
Remember, stir-frying is "noisy", with lots of sizzling--
if you don't hear the noise, then you're just steaming.
Fry about 5 minutes or so, until chicken is fully cooked.
4. Serve over brown rice
