CORN FRITTERS

INGREDIENTS

  • 1 can (8 ounces) whole kernel corn with liquid
  • 1 egg, beaten
  • Pinch of salt
  • 1 teaspoon sugar
  • 1 tablespoon vegetable oil
  • 1/2 tablespoon vanilla
  • 1/3 cup pancake mix

Drain and reserve liquid from corn.
Mix liquid with all remaining ingredients except corn until just blended.
Add corn and mix slightly.
Let mixture stand for ten minutes and fry on a hot oiled griddle.
Serve with butter and syrup.
